sweet potato souffle

I never thought I liked sweet potatoes. I was wrong!
Not only are they packed with healthy stuff (ie: beta carotene,
vitamin A, vitamin C and some other great stuff) but they're
super yummy too!! This is a dish that I like to make for
Thanksgiving but I needed some last night so we put
tradition aside and delved into the yummy goodness that is
"Sweet potato souffle." Want some too?

preheat your oven to 350

Combine 4-5 medium sized sweet potatoes (boiled and mushy),
1/2 cup sugar, 2 eggs, 1/2 cup heavy whipping cream, 1/2 tsp salt,
and 1 tsp cinnamon in a blender. Blend it up until it's super creamy.
Pour that lovely stuff into a 2 quart baking dish and set it aside.
In a mixing bowl combine: 1/3 cup melted butter, 2/3 cup brown
sugar, 1 cup toasted pecans (I used almonds this time),
1 cup flaked coconut, and 1/3 cup flour. Mix it all up with a fork
until it's well incorporated.
Crumble the good stuff on top of the sweet potato puree and
throw it in the oven (not literally...that would be a mess) for
30-35 minutes. You can serve it warm or cold.
and if you're anything like me, you'll need to make sure it's
not poisoned.
Nope...it's all good!
