I love Saturdays. I get to sleep in and usually I don't have anywhere to go.
The past several Saturdays I've been making scones for breakfast.
I also love scones and so Saturdays, I've decided, will be scone days.
Here is one of my favorites:
Orange Scones
3 cups flour
1/2 cup sugar
2-1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp salt
2 Tbsp orange zest divided
6 Tbsp cold butter
1 cup vanilla yogurt
1/4 cup orange juice
2 Tbsp heavy cream
2 Tbsp sugar
Combine flour, sugar, baking powder, baking soda, salt, and half of the orange zest. With a pastry blender, cut in your butter until it's a nice crumbly texture. Stir in yogurt and juice just until moistened. Pat dough into
a flat circle that's about an inch thick. Cut into 12 wedges. Combine the 2 Tablespoons of sugar and the remaining orange zest. Brush the dough with cream and then sprinkle the orange sugar on top. Separate the wedges slightly and bake for 15-20 minutes at 400° or until the edges are golden.
I always like to serve my scones with some clotted cream. To make the clotted cream (and I'm sure this is not authentic) I beat 1 cup of heavy whipping cream until soft peaks form. I then add (while still whipping) 2 tsp. sugar and 2 tsp. lemon juice. It should get quite thick and, for lack of a better word, clot-y looking. I try really hard to eat healthy during the week so I feel justified in indulging a bit on the weekends.
